What is pastel de nata? And why is it so popular in Portugal?

Pastel de Nata is a crispy, flaky tart with a creamy egg custard filling and a dusting of cinnamon. This pastry was first introduced to the Portuguese culinary landscape around the 18th century by the monks of Jeronimos Monastery, Belem (Mosteiro dos Jerónimos) in Lisbon

There are two parts to a great pastel de nata – the puff pastry and a creamy custard filling. The puff pastry forms the base and crust of the tart, providing a flaky and buttery texture. The custard is the filling, and typically includes egg yolks, milk, sugar, lemon zest, and cinnamon.

As far as the ingredients of the pastel de nata go, you can easily find them in a grocery store near you. But it is the technique (and extremely hot ovens), and the experience of learning and baking with the locals, that make it a beautiful memory.
